Bake bakery-style cranberry orange muffins at home. You get moist muffins with big tops and bright flavor.

Ingredients

  • All-purpose flour
  • Granulated sugar
  • Baking powder
  • Salt
  • Unsalted butter, softened
  • Large eggs
  • Whole milk
  • Orange zest
  • Orange juice
  • Fresh or frozen cranberries
  • Coarse sugar for topping

Instructions

  1. Preheat your oven and prepare your muffin tin with liners or grease.
  2. Whisk together the dry ingredients: flour, sugar, baking powder, and salt in a bowl.
  3. In a separate bowl, cream the softened butter until light.
  4. Beat in the eggs one at a time.
  5. Stir in the milk, orange zest, and orange juice until just combined.
  6. Gently fold the dry ingredients into the wet ingredients until just mixed. Do not overmix.
  7. Fold in the cranberries.
  8. Divide the batter evenly among the muffin cups, filling them nearly to the top.
  9. Sprinkle the tops generously with coarse sugar.
  10. Bake until a toothpick inserted into the center comes out clean.
  11. Let the muffins cool slightly in the pan before transferring them to a wire rack.

Notes

  • Using fresh cranberries gives the best flavor, but frozen work well too. Do not thaw frozen cranberries before using.
  • For extra lift and bakery-style tops, ensure your baking powder is fresh.
  • Zest the orange before juicing it.
  • You can use a mix of half whole wheat flour and half all-purpose flour for a slightly heartier muffin.
