Ingredients

Scale
  • 1 tablespoon coconut oil
  • 1 pound salmon fillets, cut into 1-inch pieces
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon red curry paste (adjust to your spice preference)
  • 1 (13.5 ounce) can full-fat coconut milk
  • 1/2 cup low-sodium chicken or vegetable broth
  • 1 tablespoon fish sauce
  • 1 teaspoon brown sugar
  • Juice of 1/2 lime
  • 1/4 cup fresh cilantro, chopped (for garnish)
  • 2 cups cooked white rice (for serving)

Instructions

  1. Heat the coconut oil in a large skillet or Dutch oven over medium heat.
  2. Add the salmon pieces to the skillet. Cook for 2-3 minutes per side until lightly browned. Remove the salmon and set it aside.
  3. Add the chopped onion to the same skillet. Cook until softened, about 4 minutes.
  4. Stir in the minced garlic and grated ginger. Cook for 1 minute until fragrant.
  5. Add the red curry paste. Cook, stirring constantly, for 1 minute to bloom the flavors.
  6. Pour in the coconut milk and broth. Stir well, scraping up any browned bits from the bottom of the pan.
  7. Stir in the fish sauce and brown sugar. Bring the sauce to a gentle simmer.
  8. Return the browned salmon to the skillet. Reduce the heat to low, cover, and let it simmer for 5-7 minutes, or until the salmon is cooked through and flakes easily. Be careful not to overcook the fish.
  9. Remove the skillet from the heat. Stir in the lime juice.
  10. Taste the sauce and adjust seasoning if needed.
  11. Serve the creamy salmon curry immediately over your cooked rice. Garnish generously with fresh cilantro.

Notes

  • For a lighter sauce, you can use light coconut milk, but the texture will be less rich.
  • If you prefer vegetables, add sliced bell peppers or spinach during the last 5 minutes of simmering.
  • This dish tastes even better the next day as the flavors deepen.
