A simple recipe for a refreshing, creamy cucumber salad featuring fresh dill, perfect as a cool side dish.

Ingredients

Scale
  • 2 large cucumbers, thinly sliced
  • 1/2 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 1 tablespoon white vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt, plus more for drawing out water
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh dill, chopped
  • 1/4 small red onion, thinly sliced (optional)

Instructions

  1. Slice the cucumbers thinly. Place them in a colander set over a bowl. Sprinkle generously with salt and let them sit for 20 to 30 minutes. This draws out excess water.
  2. Gently squeeze the cucumbers with your hands or press them lightly with a paper towel to remove as much liquid as possible. Discard the liquid.
  3. In a medium bowl, whisk together the Greek yogurt, mayonnaise, white vinegar, sugar, salt, and pepper until smooth.
  4. Stir in the chopped fresh dill and the optional sliced red onion into the dressing.
  5. Gently fold the drained cucumber slices into the dressing until they are fully coated.
  6. Cover the bowl and chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to combine.

Notes

  • For a crispier salad, use English or Persian cucumbers as they have fewer seeds.
  • If you prefer a tangier dressing, increase the vinegar slightly.
  • This salad tastes best when served cold.
