Ingredients

Scale
  • 1 pound pasta (fettuccine or penne work well)
  • 1 tablespoon olive oil
  • 1 pound chicken breast, cut into bite-sized pieces (optional)
  • 1 small yellow onion, finely chopped
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine or chicken broth
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 1 teaspoon dried Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • 5 ounces fresh spinach
  • Salt and freshly ground black pepper to taste

Instructions

  1. Cook pasta according to package directions. Reserve about 1 cup of pasta water before draining.
  2. While the pasta cooks, season chicken pieces with salt and pepper, if using.
  3. Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned and cooked through. Remove chicken and set aside.
  4. Add onion to the skillet and cook until softened, about 3 minutes.
  5. Add minced garlic and cook for 1 minute until fragrant.
  6. Pour in white wine or broth to deglaze the pan, scraping up any browned bits. Let it simmer for 2 minutes.
  7. Reduce heat to low. Stir in heavy cream, chicken broth, Parmesan cheese, Italian seasoning, and red pepper flakes. Simmer gently until the sauce thickens slightly, about 5 minutes.
  8. Add the spinach to the sauce, stirring until it wilts completely.
  9. Return the cooked chicken to the skillet, if using.
  10. Add the drained pasta to the sauce. Toss to coat everything well. If the sauce seems too thick, add a splash of reserved pasta water until you reach your desired consistency.
  11. Taste and adjust seasoning with salt and pepper as needed.
  12. Serve immediately, topped with extra Parmesan cheese.

Notes

  • You control the creaminess by adding more or less reserved pasta water.
  • Use fresh spinach for the best texture and flavor.
  • This dish tastes even better the next day.
