Ingredients

Scale
  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups mixed greens
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons chopped fresh parsley
  • For the Dressing:
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon honey or maple syrup
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the rinsed chickpeas very dry with a paper towel. This is key for crispiness!
  3. In a medium bowl, toss the dried chickpeas with 1 tablespoon of olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated.
  4. Spread the seasoned chickpeas in a single layer on a baking sheet.
  5. Roast for 20-25 minutes, or until the chickpeas are golden brown and crispy, shaking the pan halfway through.
  6. While the chickpeas are roasting, prepare the dressing. In a small bowl, whisk together 3 tablespoons of olive oil, lemon juice, Dijon mustard, honey or maple syrup, salt, and pepper until well combined.
  7. In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, and red onion.
  8. Add the roasted crispy chickpeas to the salad.
  9. Drizzle the dressing over the salad and toss gently to coat.
  10. Garnish with fresh parsley before serving.

Notes

  • For extra flavor, you can add other spices to the chickpeas like cumin or chili powder.
  • Feel free to customize your salad with your favorite vegetables like bell peppers, carrots, or avocado.
  • The dressing can be made ahead of time and stored in the refrigerator.
