Make incredibly flavorful and crispy chicken cutlets using Panko breadcrumbs and fresh herbs. This recipe brings together deep, comforting flavor with a light, fresh crunch for an easy and satisfying dinner.

Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts, halved horizontally (4 cutlets total)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup all-purpose flour
  • 2 large eggs, lightly beaten
  • 1 1/2 cups Panko breadcrumbs
  • 1/4 cup finely chopped fresh parsley
  • 1 tablespoon finely chopped fresh thyme
  • 1 teaspoon garlic powder
  • 1/4 cup olive oil, plus more for frying

Instructions

  1. Place chicken cutlets between two pieces of plastic wrap. Pound them to about 1/4 inch thickness. Season both sides with salt and pepper.
  2. Set up your breading station: Place flour in one shallow dish. Beat eggs in a second shallow dish. In a third shallow dish, combine Panko breadcrumbs, fresh parsley, fresh thyme, and garlic powder.
  3. Dredge each cutlet first in the flour, shaking off excess.
  4. Dip the floured cutlet into the beaten eggs, letting any excess drip off.
  5. Press the cutlet firmly into the Panko mixture, coating both sides completely.
  6. Heat the olive oil in a large skillet over medium-high heat until shimmering. You should have about 1/4 inch of oil in the pan.
  7. Carefully place 2 cutlets into the hot oil. Fry for 3 to 4 minutes per side until golden brown and cooked through (internal temperature reaches 165°F).
  8. Remove the chicken and place it on a wire rack set over a baking sheet to drain excess oil. Repeat with the remaining cutlets.
  9. Serve immediately and enjoy your perfectly crispy cutlets.

Notes

  • Pounding the chicken ensures even cooking and a tender result.
  • For extra crispiness, chill the breaded cutlets for 15 minutes before frying.
  • You can substitute other fresh herbs like rosemary or oregano for variety.
  • Taste the Panko mixture before coating to adjust seasoning if needed.
