Ingredients
Scale
1 ripe avocado, mashed
2 tablespoons salsa
1 tablespoon lime juice
1/4 teaspoon chili powder
1/4 teaspoon cumin
Pinch of salt
Pinch of black pepper
4 large whole wheat tortillas
1 cup shredded lettuce
1/2 cup black beans, rinsed and drained
1/4 cup corn, fresh or frozen
1/4 cup chopped red onion
Optional toppings: shredded cheese, sour cream, hot sauce
Instructions
In a small bowl, combine the mashed avocado, salsa, lime juice, chili powder, cumin, salt, and pepper. Mix well until smooth.
Lay out the four tortillas on a clean surface.
Spread the avocado mixture evenly over each tortilla.
Top each tortilla with shredded lettuce, black beans, corn, and red onion.
Add any optional toppings you prefer.
Fold in the sides of each tortilla, then tightly roll them up from the bottom.
For extra crispiness, you can lightly toast the wraps in a dry skillet over medium heat for 1-2 minutes per side, or until golden brown.
Slice in half if desired and serve immediately.
Notes
Ensure your avocado is ripe for the best creamy texture.
Adjust the chili powder and other seasonings to your spice preference.
Feel free to add other vegetables like bell peppers or jalapeños.
These wraps can be prepared ahead of time, but it’s best to add the avocado mixture just before serving to prevent browning.
