Ingredients
Scale
2 pounds beef stew meat or chuck roast, cut into 1-inch pieces
1 packet (1 ounce) dry onion soup mix
1 packet (1 ounce) dry ranch seasoning mix
1 (10.5 ounce) can condensed cream of mushroom soup
1 cup beef broth
1 tablespoon Worcestershire sauce
2 tablespoons cornstarch
1/4 cup cold water
Egg noodles or mashed potatoes, for serving
Instructions
Place the beef pieces in the bottom of your slow cooker.
Sprinkle the dry onion soup mix and dry ranch seasoning mix evenly over the beef.
In a separate bowl, whisk together the cream of mushroom soup, beef broth, and Worcestershire sauce until combined. Pour this mixture over the beef in the slow cooker.
Cover the slow cooker and cook on LOW for 7 to 8 hours or on HIGH for 3 to 4 hours, until the beef is very tender.
About 30 minutes before serving, mix the cornstarch and cold water in a small bowl to create a slurry. Stir this slurry into the liquid in the slow cooker.
Increase the heat to HIGH (if it was on LOW) and cook uncovered for about 15 to 20 minutes, stirring occasionally, until the gravy thickens.
Serve the tender Crockpot Beef Tips and gravy hot over prepared egg noodles or mashed potatoes.
Notes
For extra flavor depth, you can sear the beef tips in a hot skillet with a little oil before adding them to the slow cooker.
If you prefer a thinner gravy, reduce the amount of cornstarch used in the final step.
This dish freezes well; cool completely before storing in an airtight container.
