Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 1 (15 ounce) can great northern beans, rinsed and drained
  • 1 (4 ounce) can diced green chiles, undrained
  • 1 (10 ounce) can diced tomatoes and green chiles, undrained
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1 cup chicken broth
  • 1 medium onion, chopped
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces cream cheese, cut into cubes (optional, for extra creaminess)
  • 1/2 cup heavy cream or milk (optional, added at the end)

Instructions

  1. Place the chicken breasts in the bottom of your slow cooker.
  2. Top the chicken with the rinsed and drained white beans, undrained diced green chiles, and undrained diced tomatoes and green chiles.
  3. In a separate bowl, whisk together the cream of chicken soup, chicken broth, chopped onion, chili powder, cumin, oregano, garlic powder, salt, and pepper. Pour this mixture over the ingredients in the slow cooker.
  4. If using, add the cubes of cream cheese over the top.
  5. Cover the slow cooker and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours, until the chicken is cooked through and easily shredded.
  6. Remove the chicken breasts from the slow cooker and shred them using two forks. Return the shredded chicken to the chili.
  7. Stir in the heavy cream or milk, if using, until the chili is creamy.
  8. Taste and adjust seasonings as needed before serving. Serve hot with your favorite toppings.

Notes

  • For a thicker chili, remove about 1 cup of the liquid mixture before adding the cream cheese, mix 2 tablespoons of cornstarch into the liquid, and then return it to the slow cooker before stirring everything together.
  • Shredding the chicken is easiest right after it finishes cooking while it is still hot.
  • Toppings like avocado, fresh cilantro, shredded Monterey Jack cheese, or a dollop of Greek yogurt add fresh flavor to this hearty chicken chili slow cooker meal.
