Create delicious, nutty, and chocolatey granola bars packed with dried cherries. These bars offer a perfect balance of comforting tradition and fresh flavor.

Ingredients

  • Rolled Oats: 2 cups
  • Puffed Rice Cereal: 1 cup
  • Dark Chocolate Chips: 1/2 cup
  • Dried Cherries: 1/2 cup
  • Chopped Pecans or Walnuts: 1/2 cup
  • Ground Flaxseed: 1/4 cup
  • Maple Syrup or Honey: 1/2 cup
  • Peanut Butter or Almond Butter: 1/2 cup
  • Coconut Oil, melted: 2 tablespoons
  • Vanilla Extract: 1 teaspoon
  • Salt: 1/4 teaspoon

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a large bowl, combine the rolled oats, puffed rice cereal, dark chocolate chips, dried cherries, chopped nuts, and ground flaxseed. Mix well.
  3. In a small saucepan, gently heat the maple syrup (or honey), nut butter, and melted coconut oil over low heat until smooth. Remove from heat and stir in the vanilla extract and salt.
  4. Pour the wet mixture over the dry ingredients. Stir thoroughly until everything is evenly coated.
  5. Transfer the mixture to the prepared baking pan. Press down firmly and evenly using the back of a spatula or another piece of parchment paper. Pack it tightly.
  6. Bake for 18 to 22 minutes, until the edges are lightly golden brown.
  7. Let the bars cool completely in the pan on a wire rack. Cooling is important for them to set.
  8. Once cool, lift the parchment paper overhang to remove the block. Cut into 12 or 16 bars.

Notes

  • For extra flavor, lightly toast the rolled oats before mixing them with the other dry ingredients.
  • If you prefer a chewier bar, reduce the baking time slightly.
  • Store the finished bars in an airtight container at room temperature for up to one week.
  • You can substitute other dried fruits like cranberries or blueberries if you wish.
