A simple, cheesy baked casserole featuring ground beef and Nacho Cheese Doritos for a quick weeknight dinner.

Ingredients

Scale
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 (10 ounce) can condensed cream of mushroom soup
  • 1 cup milk
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups shredded cheddar cheese, divided
  • 1 (4 ounce) can diced green chiles, drained
  • 1 (10 ounce) bag Nacho Cheese Doritos, lightly crushed

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Cook the ground beef and onion in a large skillet over medium heat until the beef is browned and the onion is soft. Drain off any excess grease.
  3. Stir the cream of chicken soup, cream of mushroom soup, milk, chili powder, cumin, salt, and pepper into the skillet with the meat mixture. Cook until heated through, about 5 minutes.
  4. Remove the skillet from the heat. Stir in 1 1/2 cups of the shredded cheddar cheese and the drained green chiles.
  5. Spread half of the crushed Doritos in an even layer on the bottom of the prepared baking dish.
  6. Pour the meat and cheese mixture evenly over the layer of chips.
  7. Top the mixture with the remaining half of the crushed Doritos.
  8. Bake for 20 minutes.
  9. Sprinkle the remaining 1/2 cup of cheddar cheese over the top layer of chips. Bake for an additional 5 to 10 minutes, or until the cheese is melted and bubbly.
  10. Let the casserole stand for 5 minutes before serving.

Notes

  • For a spicier flavor, substitute Nacho Cheese Doritos with Flamin’ Hot Doritos.
  • You can substitute the ground beef with 1 pound of cooked ground turkey or shredded cooked chicken.
  • If you prefer a creamier texture, add 1/2 cup of sour cream to the meat mixture before layering.
