Make your own version of the viral Dubai Chocolate Bar as creamy ice cream bars with a thick, crunchy chocolate shell.

Ingredients

Scale
  • 1 cup heavy cream
  • 1 (14 ounce) can sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1/4 cup finely crushed biscuits or graham crackers (for ice cream base)
  • 10 ounces high-quality milk chocolate, chopped
  • 1/4 cup crushed pistachios or other nuts (optional, for coating)
  • 2 tablespoons neutral oil (like coconut or vegetable oil, for coating)

Instructions

  1. Prepare the ice cream base: In a large bowl, whip the heavy cream until stiff peaks form.
  2. Gently fold in the sweetened condensed milk and vanilla extract until just combined. Do not overmix.
  3. Fold in the crushed biscuits or graham crackers.
  4. Pour the mixture into popsicle molds, leaving a small space at the top for expansion. Insert popsicle sticks.
  5. Freeze for at least 6 hours, or until completely firm.
  6. Prepare the chocolate coating: Melt the chopped milk chocolate with the neutral oil in a double boiler or microwave in short bursts, stirring until smooth. Stir in the crushed nuts, if using.
  7. Remove the frozen ice cream bars from the molds. You may need to run the outside of the mold briefly under warm water to release them. Pat them dry immediately.
  8. Dip each frozen bar into the melted chocolate mixture, ensuring a thick, even coating. Work quickly as the chocolate will set fast.
  9. Place the coated bars on a parchment-lined baking sheet.
  10. Return the bars to the freezer for 15 minutes to allow the chocolate shell to harden completely before serving.

Notes

  • For a thicker chocolate snap, chill the melted chocolate mixture slightly before dipping.
  • If you want a no-churn base without the biscuits, simply use the cream, condensed milk, and vanilla.
  • Use high-quality chocolate for the best flavor and texture in the coating.
