Make easy, fluffy, high-protein egg bites similar to Starbucks using cottage cheese and your favorite mix-ins. These are perfect for quick breakfasts or meal prepping.

Ingredients

Scale
  • 1 cup cottage cheese (small curd preferred)
  • 6 large eggs
  • 1/2 cup shredded cheese (cheddar or Monterey Jack)
  • 1/4 cup milk or unsweetened almond milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cooked, crumbled bacon or diced ham (optional)
  • 1/2 cup chopped spinach (optional)

Instructions

  1. Preheat your oven to 325°F (160°C). Lightly grease a 12-cup standard muffin tin or silicone mold.
  2. Combine the cottage cheese, eggs, milk, salt, and pepper in a blender. Blend until the mixture is completely smooth and creamy, about 30 seconds.
  3. Stir in the shredded cheese, bacon, and spinach (if using) into the blended egg mixture.
  4. Pour the mixture evenly into the prepared muffin cups, filling each about three-quarters full.
  5. Place the muffin tin into a larger baking pan. Carefully pour hot water into the larger pan until it reaches about halfway up the sides of the muffin tin cups (this creates a water bath).
  6. Bake for 20 to 25 minutes, or until the egg bites are set and a toothpick inserted near the center comes out clean.
  7. Carefully remove the muffin tin from the water bath. Let the egg bites cool in the tin for 5 minutes before removing them.
  8. Serve warm or store them for later.

Notes

  • For a smoother texture, press the cottage cheese mixture through a fine-mesh sieve before adding mix-ins.
  • If you prefer a keto version, omit the milk and use heavy cream instead, or skip the liquid entirely if your blender handles thick mixtures well.
  • Store cooled egg bites in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave for 30-45 seconds.
