Make a simple fruit pizza using a soft sugar cookie base and a sweet cream cheese frosting, topped with fresh fruit.

Ingredients

Scale
  • 1 package (16.5 ounces) refrigerated sugar cookie dough
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • 4 cups mixed fresh fruit (e.g., strawberries, kiwi, blueberries, mandarin oranges)
  • 1 tablespoon apricot jam or clear glaze (optional)

Instructions

  1. Preheat your oven to the temperature specified on the cookie dough package.
  2. Press the entire tube of sugar cookie dough evenly onto a 12-inch pizza pan or a large baking sheet lined with parchment paper.
  3. Bake the cookie crust according to package directions until lightly golden brown. Let the crust cool completely on the pan.
  4. While the crust cools, prepare the frosting. In a medium bowl, beat the softened cream cheese until smooth.
  5. Add the powdered sugar, vanilla extract, and milk. Beat until the mixture is light and fluffy.
  6. Once the cookie crust is completely cool, spread the cream cheese frosting evenly over the top, leaving a small border around the edge.
  7. Arrange the mixed fresh fruit decoratively over the frosting layer.
  8. If using, gently warm the apricot jam or glaze slightly and brush it lightly over the fruit for shine.
  9. Chill the fruit pizza for at least 30 minutes before slicing and serving.

Notes

  • You can use store-bought sugar cookie dough for maximum speed.
  • For a firmer crust, bake the dough for 2-3 minutes longer than recommended.
  • Prepare the frosting and fruit a few hours ahead, but assemble just before serving for the best texture.
  • Slice the pizza using a sharp knife or pizza cutter.
