Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 cup shredded mozzarella cheese
  • 1/2 cup mini pepperoni, chopped
  • 1/4 cup pizza sauce

Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C). Grease a standard 12-cup muffin tin or line with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, salt, oregano, and garlic powder.
  3. In a separate bowl, whisk together the milk, oil, and egg.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Gently fold in the mozzarella cheese and chopped pepperoni.
  6. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  7. Place about 1/2 teaspoon of pizza sauce on top of the batter in each cup.
  8. Bake for 15 to 18 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • You can substitute other pizza toppings like cooked sausage or diced bell peppers.
  • These muffins freeze well for easy lunch packing; cool completely before freezing.
  • For a crispier top, sprinkle a little extra cheese on top before baking.
