Make comforting, flavorful chicken pozole easily in your slow cooker. This recipe provides instructions for both the traditional red (Rojo) and green (Verde) chili broth versions.

Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts or thighs
  • 2 (15 ounce) cans white hominy, drained and rinsed
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 medium white onion, quartered
  • 4 cloves garlic, peeled
  • 4 cups chicken broth
  • For Rojo (Red): 2 tablespoons chili powder, 1 teaspoon ground cumin, 1 teaspoon dried oregano
  • For Verde (Green): 1 cup tomatillos, husked and rinsed, 1 jalapeƱo (seeds removed for less heat), 1/2 cup fresh cilantro
  • Salt and pepper to taste
  • Toppings: Shredded cabbage, sliced radishes, lime wedges, avocado slices

Instructions

  1. Place the chicken, drained hominy, diced tomatoes, onion, and garlic into the slow cooker.
  2. Pour in the chicken broth.
  3. Choose your variation: For Rojo, stir in the chili powder, cumin, and oregano. For Verde, blend the tomatillos, jalapeƱo, and cilantro with 1/2 cup of the broth until smooth, then add the mixture to the slow cooker.
  4. Season with salt and pepper.
  5. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is cooked through and tender.
  6. Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the pot and stir to combine.
  7. Taste and adjust seasoning as needed.
  8. Ladle the pozole into bowls and serve immediately with your choice of fresh toppings like cabbage, radishes, and a squeeze of lime.

Notes

  • You can prepare the chili base (Rojo spices or Verde blend) ahead of time for faster assembly.
  • This soup freezes well; cool completely before storing in airtight containers.
  • For a thicker broth, mash about 1/2 cup of the hominy against the side of the slow cooker before serving.
