Ingredients
Scale
1 cup rolled oats
1/2 cup almond flour
1/4 cup unsweetened shredded coconut
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
Pinch of ground cloves
1/2 cup creamy cashew butter (or preferred nut butter)
1/4 cup maple syrup
2 tablespoons unsweetened almond milk
1 teaspoon vanilla extract
1 teaspoon rum extract (optional, for authentic flavor)
1/4 cup white chocolate chips (for topping)
Instructions
Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
In a large bowl, combine the rolled oats, almond flour, coconut, nutmeg, cinnamon, and cloves. Mix well.
In a separate, microwave-safe bowl, gently warm the cashew butter and maple syrup together until smooth. Stir in the almond milk, vanilla extract, and rum extract (if using).
Pour the wet ingredients over the dry ingredients. Stir until everything is evenly combined and a thick dough forms.
Press the mixture firmly and evenly into the prepared baking pan. Use the back of a spoon or a spatula.
Bake for 15-18 minutes, or until the edges are lightly golden.
Remove from the oven and immediately sprinkle the white chocolate chips over the top. Let them melt for 5 minutes.
Spread the melted chocolate gently if desired.
Let the bars cool completely in the pan on a wire rack. This step is important for setting.
Once cool, lift the parchment paper overhang to remove the block. Cut into 12 even bars.
Notes
For a richer flavor, toast the oats lightly before mixing them in.
If you skip the rum extract, add a tiny pinch more nutmeg for depth.
These bars store well in an airtight container at room temperature for up to one week.
