- 2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 1 3/4 cups apple cider
- 2 large eggs
- 1/4 cup unsalted butter, melted
- 2 tablespoons vegetable oil, plus more for greasing
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a separate medium bowl, whisk together the apple cider, eggs, and melted butter.
- Pour the wet ingredients into the dry ingredients and whisk until just combined. A few lumps are okay.
- Let the batter rest for 5-10 minutes. This helps make the pancakes extra fluffy.
- Heat a lightly oiled griddle or non-stick skillet over medium heat.
- Pour about 1/4 cup of batter onto the hot griddle for each pancake.
- Cook for 2-3 minutes per side, or until golden brown and cooked through.
- Serve warm with your favorite toppings.
Notes
- For an extra apple flavor, you can add finely diced apples to the batter.
- Serve with maple syrup, whipped cream, or a dusting of powdered sugar.
- These pancakes freeze well. Let them cool completely, then store in an airtight container. Reheat in a toaster or oven.
