This recipe makes a fresh, no-cook salsa using ripe peaches, balanced with lime, cilantro, and jalapeño. It works well with tortilla chips or as a topping for grilled meats.

Ingredients

Scale
  • 3 large ripe peaches, diced
  • 1/2 cup red onion, finely diced
  • 1 jalapeño pepper, seeded and minced (use half for less heat)
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup fresh lime juice (about 2 limes)
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare all your vegetables and fruit: dice the peaches, finely dice the red onion, mince the jalapeño, and chop the cilantro.
  2. Place the diced peaches, red onion, minced jalapeño, and chopped cilantro into a medium mixing bowl.
  3. Pour the fresh lime juice over the ingredients in the bowl.
  4. Add the salt and black pepper.
  5. Gently fold all the ingredients together until they are evenly combined. Do not overmix, as this can break down the peaches.
  6. Taste the salsa and adjust the seasoning, adding more salt or lime juice if needed for balance.
  7. Cover the bowl and refrigerate for at least 15 minutes before serving to allow the flavors to meld.

Notes

  • For the best flavor, use peaches that are ripe but still firm enough to hold their shape when diced.
  • If you plan to serve this with grilled fish or chicken, consider adding a pinch of cumin to the mixture.
  • This salsa tastes best when made the same day, but it keeps well in the refrigerator for up to two days.
