Enjoy this bright, tropical Ginger Pineapple Smoothie Bowl. It’s a vitamin-packed start to your day, balancing deep, comforting flavors with fresh, sunny ingredients. This recipe comes from Mei (Sprout) and Jun (Spoon) at Spoon & Sprout.

Ingredients

Scale
  • 1 cup frozen pineapple chunks
  • 1/2 cup frozen banana slices
  • 1/2 inch fresh ginger, peeled
  • 1/2 cup coconut milk (or milk of choice)
  • 1 tablespoon lime juice
  • 1 teaspoon maple syrup (optional)
  • Toppings: Fresh mango, shredded coconut, chia seeds, extra pineapple

Instructions

  1. Place the frozen pineapple, frozen banana, fresh ginger, coconut milk, lime juice, and maple syrup (if using) into a high-speed blender.
  2. Start blending on low, using the tamper to push the ingredients down toward the blades.
  3. Gradually increase the speed until the mixture is thick and smooth, resembling soft-serve ice cream. You want it very thick for a bowl.
  4. Spoon the smoothie mixture into your serving bowl.
  5. Arrange your desired toppings artfully over the top. Serve immediately and enjoy your taste of the tropics.

Notes

  • For a thicker bowl, use less liquid initially; you can always add more, but you cannot easily remove it.
  • If you do not have fresh ginger, use 1/4 teaspoon of ground ginger, but fresh is highly recommended for the best flavor.
  • This recipe is great for using up small amounts of leftover fruit.
