Start your day with this warm and hearty Gingerbread Oatmeal topped with crunchy candied nuts. It brings the deep comfort of tradition with a bright, fresh twist for a satisfying breakfast.

Ingredients

Scale
  • 1 cup rolled oats
  • 2 cups water or milk
  • 1/4 cup molasses
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • Pinch of ground nutmeg
  • Pinch of salt
  • 1/4 cup chopped nuts (pecans or walnuts)
  • 1 tablespoon maple syrup (for nuts)
  • 1 teaspoon butter or coconut oil (for nuts)

Instructions

  1. Combine oats, water or milk, molasses, ginger, cinnamon, cloves, nutmeg, and salt in a saucepan.
  2. Bring the mixture to a boil over medium heat.
  3. Reduce heat to low and simmer, stirring occasionally, until the oatmeal thickens to your liking, about 5-7 minutes.
  4. While the oatmeal cooks, prepare the candied nuts. Melt butter or coconut oil in a small skillet over medium heat.
  5. Add the chopped nuts and maple syrup to the skillet. Stir constantly until the nuts are coated and slightly toasted, about 2-3 minutes. Watch carefully to prevent burning.
  6. Divide the cooked oatmeal into bowls.
  7. Top each serving generously with the warm candied nuts. Serve immediately and enjoy your comforting breakfast.

Notes

  • You can substitute any milk you prefer for a creamier texture.
  • Adjust the spices to match your taste preference for ginger and warmth.
  • For a quicker candying process, toast the nuts separately and toss with syrup off the heat.
