Enjoy this bright and flavorful Green Bean Almondine with a hint of fresh lemon. It is a perfect side dish that brings together the comforting base of a classic recipe with a light, seasonal touch.

Ingredients

Scale
  • 1 pound fresh green beans, trimmed
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1/4 cup sliced almonds
  • 1 small shallot, finely minced
  • 1 clove garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Blanch the green beans in boiling salted water for 3-4 minutes until they are bright green and tender-crisp. Immediately transfer them to an ice bath to stop the cooking process. Drain well.
  2. In a large skillet, melt the butter with the olive oil over medium heat.
  3. Add the sliced almonds to the skillet. Toast them, stirring frequently, until they turn golden brown, about 3-4 minutes. Remove the almonds from the skillet and set them aside.
  4. Add the minced shallot to the same skillet and cook until softened, about 2 minutes.
  5. Add the minced garlic and cook for 30 seconds until fragrant. Do not let the garlic burn.
  6. Return the blanched green beans to the skillet. Toss to coat them with the shallot and garlic mixture.
  7. Cook for 2-3 minutes, stirring occasionally, until the beans are heated through.
  8. Remove the skillet from the heat. Stir in the lemon juice and lemon zest.
  9. Season with salt and pepper to your liking.
  10. Serve immediately, garnished with the toasted almonds.

Notes

  • For the best texture, make sure your green beans are completely dry after blanching before adding them to the hot skillet.
  • You can substitute slivered almonds for sliced almonds if you prefer.
  • If you like a richer flavor, use brown butter instead of regular butter.
