Ingredients

Scale
  • 4 ears of corn, husked and cleaned
  • 2 tablespoons olive oil
  • 1/2 cup mayonnaise
  • 1/4 cup cotija cheese, crumbled
  • 2 tablespoons fresh lime juice
  • 1/4 cup chopped fresh cilantro
  • 1/4 teaspoon chili powder
  • Pinch of cayenne pepper (optional)

Instructions

  1. Preheat your grill to medium-high heat.
  2. Brush the corn with olive oil.
  3. Grill the corn for about 8-10 minutes, turning occasionally, until lightly charred and tender.
  4. While the corn is grilling, mix together the mayonnaise, cotija cheese, lime juice, cilantro, chili powder, and cayenne pepper (if using) in a small bowl.
  5. Once the corn is grilled, spread the mayonnaise mixture evenly over each ear.
  6. Serve immediately.

Notes

  • For extra char, you can grill the corn directly over the flames for a minute or two.
  • If you can’t find cotija cheese, feta cheese is a good substitute.
  • Adjust the chili powder and cayenne pepper to your spice preference.
