Ingredients
Scale
1.5 lb firm white fish fillets (cod, tilapia, or mahi-mahi)
Prepare the fish: In a bowl, mix the olive oil, lime juice, chili powder, cumin, salt, and pepper. Coat the fish fillets evenly with the mixture. Let the fish marinate for 15 minutes at room temperature.
Make the chipotle slaw: In a medium bowl, whisk together the mayonnaise, lime juice, minced chipotle pepper, adobo sauce, honey, and salt until smooth.
Add the shredded green and red cabbage to the dressing. Toss well to coat all the cabbage evenly. Set the slaw aside while you cook the fish.
Grill the fish: Preheat your grill to medium-high heat (about 400 degrees F). Lightly oil the grill grates. Place the marinated fish on the hot grill.
Grill for 4 to 6 minutes per side, depending on thickness, until the fish is opaque and flakes easily with a fork. Avoid turning the fish until it releases easily from the grates.
Warm the tortillas: Heat the tortillas directly on the grill for about 30 seconds per side, or wrap them in foil and heat in the oven until soft and warm.
Assemble the tacos: Place a portion of grilled fish onto each warm tortilla. Top generously with the chipotle slaw. Garnish with fresh cilantro and serve immediately with lime wedges.
Notes
Use a firm white fish like mahi-mahi or cod for the best grilling results.
For a lighter slaw dressing, substitute half the mayonnaise with plain Greek yogurt.
If you prefer less heat in the slaw, use only half of the minced chipotle pepper.
