A simple, refreshing summer salad featuring salty grilled halloumi cheese, sweet watermelon, and fresh mint, finished with a light lemon vinaigrette.

Ingredients

Scale
  • 8 oz halloumi cheese, sliced into 1/2 inch thick pieces
  • 4 cups cubed seedless watermelon
  • 1/2 cup fresh mint leaves, roughly chopped
  • 2 cups mixed greens (like arugula or baby spinach)
  • 1/4 cup red onion, thinly sliced
  • For the Dressing: 3 tablespoons olive oil
  • For the Dressing: 1 tablespoon fresh lemon juice
  • For the Dressing: 1 teaspoon Dijon mustard
  • For the Dressing: Salt and black pepper to taste

Instructions

  1. Prepare the dressing: Whisk together the olive oil, lemon juice, and Dijon mustard in a small bowl. Season with salt and pepper. Set aside.
  2. Heat a grill or grill pan to medium-high heat. Lightly oil the grates.
  3. Place the halloumi slices on the hot grill. Grill for 2 to 3 minutes per side until golden brown grill marks appear and the cheese is slightly softened. Remove from the grill.
  4. In a large bowl, combine the mixed greens, watermelon cubes, sliced red onion, and chopped mint.
  5. Gently toss the salad ingredients with about half of the prepared dressing.
  6. Arrange the grilled halloumi slices over the salad mixture.
  7. Drizzle the remaining dressing over the halloumi and serve immediately.

Notes

  • For added texture, sprinkle 1/4 cup of toasted pine nuts over the finished salad.
  • If you do not have a grill, you can pan-fry the halloumi in a non-stick skillet over medium heat until browned on both sides.
  • Use a small amount of balsamic vinegar in the dressing for a slightly sweeter flavor profile.
