Make this nutrient-rich bone broth to support your gut health and immunity during winter. This recipe shares the balance of deep tradition and fresh approach from Spoon & Sprout.

Ingredients

Scale
  • 4 lbs Bones (beef, chicken, or a mix)
  • 1 large Onion, quartered (skin on is fine)
  • 2 Carrots, roughly chopped
  • 2 Celery stalks, roughly chopped
  • 1 tbsp Apple Cider Vinegar
  • 1 tbsp Whole Peppercorns
  • 2 Bay Leaves
  • 1 bunch Fresh Parsley
  • Water, enough to cover bones

Instructions

  1. Place all bones in a large stockpot.
  2. Add onion, carrots, and celery to the pot.
  3. Pour in enough cold water to cover the ingredients by about an inch.
  4. Add the apple cider vinegar, peppercorns, and bay leaves.
  5. Bring the water to a boil over high heat, then immediately reduce the heat to the lowest setting so the liquid barely simmers.
  6. Skim off any scum or foam that rises to the surface during the first hour.
  7. Simmer the broth, uncovered or partially covered, for 18 to 24 hours. Maintain a very low simmer throughout.
  8. During the last 30 minutes of cooking, add the fresh parsley.
  9. Remove the pot from the heat.
  10. Carefully strain the broth through a fine-mesh sieve into a large bowl or clean containers. Discard the solids.
  11. Let the broth cool completely before refrigerating or freezing.

Notes

  • Using a mix of marrow and joint bones gives the best gelatin content.
  • The longer you simmer, the richer the flavor and nutrient extraction.
  • For a clearer broth, strain a second time through cheesecloth.
  • Once chilled, the fat will solidify on top; you can easily remove this layer.
