Ingredients
Scale
1 cup heavy cream
8 ounces good quality bittersweet chocolate, finely chopped
1/2 cup hazelnut paste or smooth hazelnut butter
1/4 cup strong brewed espresso, cooled
1 tablespoon unsalted butter, softened
1/4 teaspoon salt
1 cup cocoa powder, for dusting
1/4 cup finely chopped toasted hazelnuts, for coating (optional)
Edible gold leaf, for decoration
Instructions
Heat the heavy cream in a small saucepan until it just simmers. Do not boil.
Place the chopped chocolate in a heatproof bowl. Pour the hot cream over the chocolate. Let it sit undisturbed for 5 minutes.
Whisk the chocolate and cream mixture gently until smooth and fully combined.
Whisk in the hazelnut paste, cooled espresso, softened butter, and salt until the ganache is completely smooth.
Cover the bowl and refrigerate the ganache for at least 4 hours, or until firm enough to scoop.
Line a baking sheet with parchment paper.
Using a small scoop or spoon, portion the chilled ganache and quickly roll it into small balls between your palms. Work fast so the ganache does not melt.
Roll the truffles in cocoa powder or toasted hazelnuts, if desired.
Chill the finished truffles for 30 minutes to set them firmly.
Just before serving, carefully apply small pieces of edible gold leaf to the top of each truffle.
Notes
For the best truffle texture, make sure your espresso is completely cool before adding it to the ganache.
If your kitchen is warm, chill the rolled truffles frequently during coating.
The gold leaf is delicate; use tweezers for the best application.
These truffles store well in an airtight container in the refrigerator for up to two weeks.
