Enjoy the spicy, savory flavors of Huevos Rancheros with this lighter, healthier version. We cut back on fat while keeping that satisfying Mexican breakfast taste.
Add the tomato sauce, chili powder, cumin, and oregano to the skillet. Simmer for 5 minutes, stirring occasionally. This is your ranchero sauce.
While the sauce simmers, heat the remaining 1/2 teaspoon of olive oil in a separate non-stick pan. Lightly toast the corn tortillas until warm and slightly crisp, about 1 minute per side. Set aside.
In the same pan, gently fry or poach your eggs to your preference (we suggest sunny-side up or over easy for lightness).
To assemble, place one toasted tortilla on a plate. Spoon half of the warm ranchero sauce over the tortilla.
Carefully place one cooked egg on top of the sauce. Spoon a little more sauce over the egg.
Garnish generously with fresh cilantro. Repeat with the second tortilla, egg, and sauce. Serve immediately.
Notes
For an extra kick, add a pinch of cayenne pepper to the sauce.
You can bake the tortillas instead of lightly frying for further fat reduction.
Use fresh, seasonal tomatoes if available to boost the fresh flavor.
