Ingredients
Scale
4 large whole wheat tortillas
1 cup plain hummus
1 cup mixed greens or spinach
1 medium carrot, thinly sliced or shredded
1/2 red bell pepper, thinly sliced
1/2 cup cucumber, thinly sliced
1/2 cup alfalfa or broccoli sprouts
1/4 cup crumbled feta cheese (optional)
1 teaspoon lemon juice
Pinch of black pepper
Instructions
Lay one tortilla flat on a clean surface.
Spread about 1/4 cup of hummus evenly over the surface of the tortilla, leaving a small border around the edges.
Sprinkle the lemon juice and pepper over the hummus.
Layer the mixed greens or spinach down the center of the tortilla.
Arrange the sliced carrot, red bell pepper, and cucumber over the greens.
Top the vegetables with a generous layer of sprouts and the optional feta cheese.
Fold in the sides of the tortilla slightly, then tightly roll the wrap from the bottom edge upwards until fully closed.
Slice the wrap in half diagonally and serve immediately.
Notes
Use whole grain or high-fiber tortillas for increased nutritional value.
If you prefer a richer flavor, use roasted red pepper hummus instead of plain.
For meal prepping, assemble the wraps but wrap them tightly in plastic wrap and refrigerate for up to one day; add sprouts just before eating to maintain crispness.
