Ingredients
Scale
For the Red Velvet Whoopie Pies:
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon unsweetened cocoa powder
1/4 teaspoon salt
1 cup (2 sticks) unsalted butter, softened
1 1/2 cups granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 cup buttermilk
1 tablespoon red food coloring
1 teaspoon white vinegar
For the Cream Cheese Frosting:
8 ounces cream cheese, softened
1/2 cup (1 stick) unsalted butter, softened
1 teaspoon vanilla extract
3 cups powdered sugar
Instructions
Prepare the Whoopie Pie Batter:
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a medium bowl, whisk together the flour, baking soda, cocoa powder, and salt.
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract.
In a small bowl, combine the buttermilk and red food coloring.
In another small bowl, stir the white vinegar into the buttermilk mixture. Let it sit for a minute to curdle slightly.
Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk mixture, beginning and ending with the dry ingredients. Mix until just combined.
Shape and Bake the Whoopie Pies:
Drop rounded tablespoons of batter onto the prepared baking sheets, leaving about 2 inches between them.
Use a heart-shaped cookie cutter to gently shape the cookies while they are still on the baking sheet, or pipe the batter into heart shapes if you prefer.
Bake for 10-12 minutes, or until the edges are set and a toothpick inserted into the center comes out clean.
Let the whoopie pies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Make the Cream Cheese Frosting:
In a large bowl, beat the softened cream cheese and butter until smooth.
Stir in the vanilla extract.
Gradually add the powdered sugar, beating until the frosting is light and fluffy.
Assemble the Whoopie Pies:
Spread or pipe a generous amount of frosting onto the flat side of one whoopie pie.
Top with another whoopie pie, flat side down, to create a sandwich.
Repeat with the remaining whoopie pies.
Notes
For vibrant red color, ensure you use a good quality red food coloring.
If you don’t have buttermilk, you can make a substitute by mixing 1 tablespoon of white vinegar or lemon juice with enough milk to make 1 cup, and letting it sit for 5-10 minutes.
Drying the batter slightly before shaping can make it easier to create distinct heart shapes.
