Ingredients

Scale
  • 3 lb beef chuck roast
  • 2 tablespoons olive oil
  • 2 large yellow onions, thickly sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1/2 cup balsamic vinegar
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and black pepper to taste

Instructions

  1. Pat the beef roast dry and season generously with salt and pepper.
  2. Heat olive oil in a large Dutch oven over medium-high heat. Brown the beef on all sides. Remove the beef and set aside.
  3. Add the sliced onions to the pot. Cook until softened, about 5 to 7 minutes.
  4. Stir in the minced garlic and cook for 1 minute until fragrant.
  5. Pour in the beef broth, balsamic vinegar, and soy sauce. Scrape up any browned bits from the bottom of the pot.
  6. Add the brown sugar, dried thyme, and bay leaf. Stir to combine.
  7. Return the beef roast to the pot. The liquid should come about halfway up the sides of the roast.
  8. Bring the liquid to a simmer. Cover the Dutch oven tightly.
  9. Transfer the pot to a preheated oven at 325°F (160°C).
  10. Roast for 3 to 4 hours, or until the beef is fork-tender.
  11. Remove the bay leaf before serving. Shred the beef or slice it thickly. Serve with the onions and pan sauce.

Notes

  • For extra depth, sear the roast in batches.
  • You can add root vegetables like carrots or potatoes during the last 90 minutes of cooking.
  • Taste the sauce before serving and adjust seasoning if needed.
