Ingredients

Scale
  • 1 tablespoon vegetable oil
  • 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 teaspoon soy sauce
  • 1 teaspoon sesame oil
  • 1 cup chopped yellow onion
  • 1 cup chopped carrots
  • 1 cup chopped broccoli florets
  • 2 cloves garlic, minced
  • 2 large eggs, lightly beaten
  • 4 cups cooked white rice, preferably day-old
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • Salt and black pepper to taste

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Season with 1 teaspoon soy sauce and 1 teaspoon sesame oil. Remove chicken from skillet and set aside.
  2. Add onion, carrots, and broccoli to the skillet. Stir-fry for 3-5 minutes until vegetables are tender-crisp.
  3. Add minced garlic and cook for 30 seconds until fragrant.
  4. Push the vegetables to one side of the skillet. Pour the beaten eggs into the empty side and scramble until cooked.
  5. Add the cooked rice, reserved chicken, 2 tablespoons soy sauce, oyster sauce, and 1 teaspoon sesame oil to the skillet. Stir everything together and cook for 5-7 minutes, until the rice is heated through and well combined with the other ingredients.
  6. Season with salt and pepper to taste.
  7. Serve hot and enjoy!

Notes

  • Using day-old rice is key for the best fried rice texture.
  • Feel free to add other vegetables like peas, corn, or bell peppers.
  • For a spicier kick, add a pinch of red pepper flakes with the garlic.
