- 1 cup low-fat cottage cheese
- 3 large eggs, separated
- 1/4 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- Pinch of salt
- Cooking spray
- Place the cottage cheese and egg yolks in a blender or food processor. Blend until completely smooth.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Add the flour mixture and vanilla extract to the cottage cheese mixture. Mix until just combined. Do not overmix.
- In a clean bowl, beat the egg whites until stiff peaks form.
- Gently fold the beaten egg whites into the batter until no streaks remain.
- Preheat your waffle iron and lightly coat it with cooking spray.
- Pour the batter onto the hot waffle iron and cook according to your appliance’s directions until golden brown and crisp.
- Serve immediately with your preferred toppings.
Notes
- For a sweeter waffle, add 1 tablespoon of your preferred low-calorie sweetener to the batter.
- If you do not have a blender, press the cottage cheese through a fine-mesh sieve before mixing to remove lumps.
- You can substitute half the all-purpose flour with oat flour for added fiber.
