Ingredients
Scale
6 large egg yolks
3/4 cup granulated sugar
1/4 teaspoon salt
1 pint whole milk
1 pint heavy cream
1 cup bourbon (or to taste)
1 teaspoon vanilla extract
Freshly grated nutmeg for topping
Instructions
Whisk the egg yolks, sugar, and salt together in a medium saucepan until pale.
Gradually whisk in the milk and heavy cream.
Cook the mixture over medium-low heat, stirring constantly with a wooden spoon, until it thickens slightly and coats the back of the spoon. Do not let it boil.
Remove the saucepan from the heat.
Stir in the bourbon and vanilla extract.
Pour the eggnog into a pitcher.
Cover and chill in the refrigerator for at least 4 hours, or until very cold.
Serve cold, garnished with freshly grated nutmeg.
Notes
This recipe uses pasteurized eggs for safety, which is the Sprout’s fresh approach.
For a richer flavor, you can age the eggnog in the refrigerator for up to two weeks (the Spoon’s time-honored method).
If you prefer a lighter version, substitute 1/2 cup of the heavy cream with whole milk.
