Enjoy a festive holiday breakfast with this Homemade Eggnog Chia Pudding. It captures the comforting, spiced flavor of traditional eggnog in a light, nourishing way. This recipe balances deep, comforting flavors with a fresh approach, perfect for starting your holiday morning.

Ingredients

Scale
  • 1/4 cup chia seeds
  • 1 cup unsweetened almond milk (or dairy milk for a richer taste)
  • 1/4 cup store-bought or homemade eggnog
  • 1 tablespoon maple syrup (adjust to your sweetness preference)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground nutmeg
  • Pinch of ground cinnamon
  • Optional garnish: extra nutmeg, whipped cream, or toasted pecans

Instructions

  1. In a jar or bowl, combine the chia seeds, almond milk, eggnog, maple syrup, vanilla extract, nutmeg, and cinnamon.
  2. Stir well immediately to prevent the chia seeds from clumping at the bottom.
  3. Cover the container and refrigerate for at least 4 hours, or preferably overnight, until the mixture thickens into a pudding consistency.
  4. Stir the pudding once about 15 minutes after the initial mix to break up any clumps.
  5. When ready to serve, stir the pudding again. If it is too thick, add a splash more milk or eggnog until you reach your desired texture.
  6. Divide into serving dishes. Garnish with a dusting of nutmeg or your favorite toppings.

Notes

  • For a richer, more traditional flavor, use whole milk instead of almond milk.
  • If you are concerned about raw eggs in store-bought eggnog, look for pasteurized versions or use a vegan eggnog substitute.
  • Taste the pudding before adding sweetener; eggnog often adds enough sweetness on its own.
  • This pudding stores well in the refrigerator for up to three days.
