Ingredients
Scale
2 cups fresh or frozen raspberries
1 cup water
1 cup granulated sugar (or substitute)
1/2 cup water (for thinning syrup)
1/2 cup fresh lemon juice
4 cups cold club soda or sparkling water
Instructions
Combine raspberries, 1 cup water, and sugar in a saucepan.
Bring the mixture to a simmer over medium heat, stirring until the sugar dissolves completely.
Reduce heat to low and cook for 10 minutes, gently mashing the berries as they soften.
Remove the pan from the heat and let the mixture steep for 20 minutes.
Strain the syrup through a fine-mesh sieve into a clean bowl, pressing gently on the solids to extract all liquid. Discard the solids.
Stir the 1/2 cup of water and the lemon juice into the strained raspberry syrup.
Chill the syrup completely in the refrigerator, at least 1 hour.
To serve, mix 1 part chilled raspberry syrup with 3 to 4 parts cold club soda or sparkling water, adjusting ratios to your taste preference.
Pour the mixture over ice and serve immediately.
Notes
For a less sweet syrup, reduce the sugar by 1/4 cup and add 1 tablespoon of honey or maple syrup.
Store the finished raspberry syrup in an airtight container in the refrigerator for up to 2 weeks.
If using a soda maker (like SodaStream), carbonate the plain cold water first, then gently mix in the chilled syrup just before serving to maintain carbonation.
Add a few sprigs of fresh mint or basil to the syrup while it steeps for an herbal variation.
