Ingredients
Chicken (whole or pieces)
Water or Broth
Vegetables (carrots, celery, onion)
Herbs (thyme, bay leaf)
Flour
Milk or Cream
Salt and Pepper
Dumpling ingredients (flour, baking powder, lard or butter, milk or water)
Instructions
Simmer chicken in water or broth with vegetables and herbs until tender.
Remove chicken, reserving the broth. Shred the chicken meat.
Strain the broth and return it to the pot. Skim any excess fat.
Thicken the broth with a roux made from fat and flour, then whisk in milk or cream. Season well.
Return shredded chicken to the simmering broth.
Prepare the dumpling dough by mixing dry ingredients, cutting in the fat, and adding liquid until just combined. Do not overmix.
Drop spoonfuls of the dough onto the simmering stew.
Cover the pot and cook the dumplings without lifting the lid until they are light and fluffy.
Serve immediately.
Notes
For the richest flavor, use homemade chicken broth.
Keep the stew at a gentle, steady simmer when adding dumplings.
For fluffier dumplings, handle the dough as little as possible.
Taste and adjust seasoning before serving the final dish.
