A simple recipe for grilling fresh peaches, coating them with honey, and serving them warm with a creamy topping of mascarpone or vanilla ice cream.

Ingredients

Scale
  • 4 firm, ripe peaches
  • 1 tablespoon olive oil
  • 2 tablespoons honey
  • 1 teaspoon water
  • Pinch of salt
  • 1 cup mascarpone cheese OR 4 scoops vanilla ice cream

Instructions

  1. Cut the peaches in half lengthwise and remove the pits.
  2. Brush the cut sides of the peaches lightly with olive oil.
  3. Preheat your grill to medium heat (about 350 to 400 degrees Fahrenheit).
  4. Place the peaches cut-side down on the oiled grill grates.
  5. Grill for 4 to 5 minutes until distinct grill marks appear and the fruit softens slightly.
  6. While the peaches grill, mix the honey, water, and salt in a small bowl to create a thin glaze.
  7. Flip the peaches and grill for another 2 to 3 minutes until heated through.
  8. Remove the peaches from the grill and immediately brush the cut sides generously with the honey glaze.
  9. Serve two peach halves per person, topped with a dollop of mascarpone cheese or a scoop of vanilla ice cream.

Notes

  • For mascarpone, you can lightly sweeten it with a teaspoon of powdered sugar if desired, but it is good served plain.
  • If you do not have a grill, you can use a grill pan on the stovetop over medium-high heat.
  • Select peaches that are firm enough to hold their shape during grilling.
