Ingredients
Scale
1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
1 tablespoon soy sauce
1 teaspoon cornstarch
2 tablespoons sesame oil, divided
1 cup broccoli florets
1 red bell pepper, sliced
1/2 cup sliced carrots
4 ounces dried noodles (such as ramen or lo mein)
1/4 cup honey
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 teaspoon grated fresh ginger
2 cloves garlic, minced
1 teaspoon sesame seeds, for garnish
2 green onions, sliced, for garnish
Instructions
Toss the chicken pieces with 1 tablespoon soy sauce and cornstarch. Set aside.
Cook noodles according to package directions. Drain and set aside.
Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat. Add the chicken and cook until browned and cooked through. Remove chicken and set aside.
Add the remaining 1 tablespoon of sesame oil to the skillet. Add broccoli, bell pepper, and carrots. Stir-fry for 3-4 minutes until vegetables are crisp-tender.
In a small bowl, whisk together honey, 2 tablespoons soy sauce, rice vinegar, ginger, and garlic to create the sauce.
Return the chicken to the skillet with the vegetables. Pour the sauce over everything. Cook for 1-2 minutes, stirring constantly, until the sauce thickens slightly and coats the chicken and vegetables.
Add the cooked noodles to the skillet. Toss everything together until well combined and heated through.
Serve immediately. Garnish with sesame seeds and sliced green onions.
Notes
For a lighter touch (Sprout’s way), use chicken breast and increase the fresh vegetables.
If you prefer a deeper flavor (Spoon’s way), let the chicken marinate for 15 minutes before cooking.
You can substitute any firm noodle you have on hand.
