Make tender, flavorful BBQ pulled chicken quickly using your Instant Pot. This recipe yields perfect shredded chicken for easy sandwiches.

Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1 cup your favorite BBQ sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 hamburger buns
  • Optional: Coleslaw for topping

Instructions

  1. Place the chicken breasts in the inner pot of your Instant Pot.
  2. In a separate bowl, whisk together the chicken broth, BBQ sauce, apple cider vinegar, smoked paprika, garlic powder, onion powder, salt, and pepper.
  3. Pour the sauce mixture over the chicken in the Instant Pot.
  4. Secure the lid and set the vent to sealing.
  5. Cook on Manual/Pressure Cook setting on High for 10 minutes.
  6. Allow for a Natural Pressure Release (NPR) for 10 minutes, then carefully switch the valve to venting to release any remaining pressure.
  7. Remove the chicken from the pot and place it on a cutting board. It should shred easily.
  8. Shred the chicken using two forks.
  9. Return the shredded chicken to the Instant Pot. Stir well to coat the chicken completely with the remaining sauce.
  10. Use the Sauté function for 3 to 5 minutes, stirring occasionally, until the sauce thickens slightly and the chicken is heated through.
  11. Serve the BBQ pulled chicken immediately on hamburger buns, topped with coleslaw if desired.

Notes

  • For best results, use boneless, skinless chicken thighs instead of breasts; adjust cook time to 12 minutes on High pressure.
  • If the sauce is too thin after shredding, remove the chicken and use the Sauté function to reduce the liquid before mixing the chicken back in.
  • You can prepare this chicken ahead of time and reheat it using the Slow Cook setting on your Instant Pot.
