Create fun and festive Jack-O’-Lantern Stuffed Peppers for a Halloween treat. These savory bell peppers are carved and filled with a delicious mixture, making them a perfect centerpiece for your Halloween meal.

Ingredients

Scale
  • 4 large bell peppers (any color, orange or yellow recommended)
  • 1 tablespoon olive oil
  • 1 pound ground turkey or beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup cooked rice
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1/2 cup shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: corn kernels, black beans for filling

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. Carve jack-o’-lantern faces into the sides of the peppers.
  4. In a large skillet, heat olive oil over medium heat. Add ground meat and cook until browned, breaking it up with a spoon. Drain excess fat.
  5. Add chopped onion and cook until softened, about 5 minutes. Stir in minced garlic and cook for 1 minute more until fragrant.
  6. Stir in cooked rice, diced tomatoes (with juice), salt, and pepper. If using, add corn or black beans.
  7. Cook for 5-7 minutes, stirring occasionally, until heated through.
  8. Spoon the filling evenly into the carved bell peppers.
  9. Place the stuffed peppers in a baking dish. Add about 1/2 inch of water to the bottom of the dish.
  10. Cover the dish with foil and bake for 45-60 minutes, or until the peppers are tender.
  11. Remove foil, top with shredded cheddar cheese, and bake for another 5-10 minutes, or until cheese is melted and bubbly.

Notes

  • You can use any color bell peppers, but orange or yellow will give the most authentic jack-o’-lantern look.
  • For a vegetarian option, use a mixture of rice, beans, corn, and vegetables as the filling.
  • Ensure the faces are carved deep enough to see the filling, but not so deep that the pepper becomes flimsy.
  • The water in the baking dish helps steam the peppers, making them tender.
