Ingredients
Scale
1 pound ground beef
1 small onion, chopped
1 (10.75 ounce) can cream of mushroom soup
1 (10.5 ounce) can cream of chicken soup
1/2 cup sour cream
1 cup shredded cheddar cheese, divided
1 cup frozen mixed vegetables (peas, carrots, corn)
1 cup refrigerated biscuit dough, cut into pieces
1/2 cup shredded Monterey Jack cheese
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
Brown the ground beef and chopped onion in a skillet over medium heat. Drain off any excess grease.
In a large bowl, combine the cooked beef and onion mixture with the cream of mushroom soup, cream of chicken soup, sour cream, and 1/2 cup of the cheddar cheese. Stir in the frozen mixed vegetables.
Spread this beef mixture evenly into your prepared baking dish. This forms the base layer of your hearty beef casserole.
Arrange the biscuit dough pieces over the top of the beef mixture. Do not overlap them too much; leave small gaps.
Bake for 20 minutes, or until the biscuits are lightly golden brown.
Remove the casserole from the oven. Sprinkle the remaining 1/2 cup cheddar cheese and the Monterey Jack cheese over the biscuits.
Return the casserole to the oven and bake for another 5 to 10 minutes, or until the cheese is melted and bubbly.
Let the layered beef and cheese bake rest for 5 minutes before you serve this classic John Wayne Casserole.
Notes
For a Tex Mex Casserole Bake flavor, add one small can of drained Rotel tomatoes to the beef mixture.
You can substitute the refrigerated biscuits with your favorite cornbread mix prepared according to package directions for a Simple Casserole with Cornbread Topping.
If you are making this for a potluck, assemble the entire casserole, cover it, and refrigerate it up to 24 hours before baking. Add about 10 minutes to the initial baking time if baking from cold.
