Ingredients
Scale
2 lbs boneless, skinless chicken breasts or thighs
1 cup plain Greek yogurt
1/4 cup fresh lemon juice
3 tablespoons olive oil
4 cloves garlic, minced
2 teaspoons dried oregano
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
Instructions
In a medium bowl, whisk together the Greek yogurt, lemon juice, olive oil, minced garlic, oregano, thyme, salt, pepper, and paprika to create the marinade.
Place the chicken pieces in a large zip-top bag or shallow dish. Pour the marinade over the chicken, ensuring all pieces are coated.
Refrigerate the chicken for at least 2 hours, or preferably up to 8 hours, to allow the marinade to tenderize the meat.
Preheat your grill to medium-high heat (about 400 degrees F) or preheat your oven to 400 degrees F (200 degrees C).
If grilling, lightly oil the grates. Remove chicken from the marinade, letting excess drip off. Grill for 6-8 minutes per side, until internal temperature reaches 165 degrees F.
If baking, place chicken on a foil-lined baking sheet. Bake for 20-25 minutes, or until cooked through.
Let the chicken rest for 5 minutes before slicing and serving.
Notes
For extra flavor, add 1 teaspoon of lemon zest to the marinade mixture.
If you prefer thighs, the cooking time may be slightly longer.
This chicken pairs well with roasted potatoes or a simple cucumber tomato salad.
