Make this hearty, low-carb taco soup using ground beef. This recipe is beanless and perfect for a satisfying keto meal.

Ingredients

Scale
  • 1.5 lb ground beef
  • 1 medium onion, chopped
  • 1 (10 oz) can diced tomatoes with green chilies, undrained
  • 1 (15 oz) can tomato sauce (no sugar added)
  • 4 cups beef broth
  • 1 packet (1 oz) low-carb taco seasoning mix
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • 1/2 cup heavy cream (optional, for richness)
  • Salt and pepper to taste
  • Toppings: Shredded cheddar cheese, sour cream, avocado slices

Instructions

  1. Brown the ground beef and chopped onion in a large pot or Dutch oven over medium heat. Drain off any excess grease.
  2. Add the diced tomatoes with green chilies, tomato sauce, beef broth, taco seasoning, chili powder, cumin, oregano, and garlic powder to the pot.
  3. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 20 minutes to allow flavors to combine.
  4. If using, stir in the heavy cream during the last 5 minutes of cooking.
  5. Taste the soup and add salt and pepper as needed.
  6. Serve hot with your preferred keto toppings like cheese, sour cream, and avocado.

Notes

  • For a slow cooker method, brown the beef and onion separately, then combine all ingredients (except heavy cream) in the slow cooker. Cook on low for 6-8 hours or high for 3-4 hours. Stir in cream before serving.
  • Check your taco seasoning label to confirm it contains no added sugar or starches to keep it strictly keto.
  • This soup freezes well for easy meal prep.
