Ingredients
Scale
2 cans (20 oz each) young green jackfruit in brine, drained and rinsed
1 tablespoon olive oil
1 cup Korean BBQ sauce
1/4 cup soy sauce
2 tablespoons maple syrup
1 tablespoon rice vinegar
1 teaspoon sesame oil
1 teaspoon grated fresh ginger
2 cloves garlic, minced
Optional toppings: sesame seeds, chopped green onions, pickled radishes
Serving suggestion: hamburger buns or rice bowls
Instructions
Preheat your oven to 375°F (190°C).
Drain and rinse the jackfruit thoroughly. Remove any tough core pieces and seeds. Shred the jackfruit with your hands or two forks.
In a large bowl, combine the shredded jackfruit, olive oil, Korean BBQ sauce, soy sauce, maple syrup, rice vinegar, sesame oil, grated ginger, and minced garlic. Toss well to coat the jackfruit evenly.
Spread the jackfruit mixture in a single layer on a baking sheet lined with parchment paper.
Bake for 25-30 minutes, stirring halfway through, until the jackfruit is tender and slightly caramelized.
Serve the Korean BBQ jackfruit warm in hamburger buns or over rice bowls.
Garnish with optional toppings like sesame seeds, chopped green onions, or pickled radishes.
Notes
Ensure you use young green jackfruit in brine, not ripe jackfruit in syrup, for this recipe.
Adjust the sweetness and spice level of the BBQ sauce to your preference.
Jackfruit can be prepared ahead of time and reheated.
