Ingredients

Scale
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 8 ounces cremini mushrooms, sliced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon all-purpose flour
  • 8 ounces egg noodles
  • 1/2 cup sour cream
  • 2 tablespoons fresh parsley, chopped (optional garnish)

Instructions

  1. Brown the ground beef in a large pot or Dutch oven over medium heat. Drain off any excess grease.
  2. Add the chopped onion and sliced mushrooms to the pot. Cook until the onion softens, about 5 minutes.
  3. Stir in the thyme, garlic powder, salt, and pepper. Cook for 1 minute until fragrant.
  4. Whisk the flour into the beef broth until smooth. Pour this mixture, along with the Worcestershire sauce, into the pot.
  5. Bring the liquid to a simmer, scraping up any browned bits from the bottom of the pot.
  6. Add the egg noodles to the pot. Stir everything well.
  7. Cover the pot, reduce the heat to low, and cook for 10 to 12 minutes, or until the noodles are tender. Stir occasionally to prevent sticking.
  8. Remove the pot from the heat. Let it sit, covered, for 5 minutes.
  9. Stir in the sour cream until fully incorporated and the sauce is creamy. Do not boil after adding the sour cream.
  10. Serve immediately, garnished with fresh parsley if you wish.

Notes

  • Use lean ground beef to minimize the need for draining grease.
  • If you prefer a thicker sauce, mix 1 teaspoon of cornstarch with 1 tablespoon of cold water and stir it in during the last 5 minutes of simmering.
  • For deeper flavor, use fresh thyme instead of dried.
  • This dish tastes best when served right away.
