Ingredients

Scale
  • 2 cups shredded leftover cooked turkey
  • 1/2 cup whole berry cranberry sauce
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 8 flour tortillas (8-inch)
  • 2 tablespoons butter or oil

Instructions

  1. In a medium bowl, combine the shredded turkey and cranberry sauce. Mix well.
  2. Lay out four of the tortillas. Evenly distribute the turkey and cranberry mixture over one half of each tortilla.
  3. Sprinkle the Monterey Jack and cheddar cheeses over the turkey mixture.
  4. Fold the other half of each tortilla over the filling, creating a half-moon shape.
  5. Heat 1 tablespoon of butter or oil in a large skillet or griddle over medium heat.
  6. Carefully place two quesadillas in the skillet. Cook for 3-4 minutes per side, until golden brown and the cheese is melted.
  7. Remove the cooked quesadillas from the skillet and set aside. Add the remaining 1 tablespoon of butter or oil to the skillet.
  8. Cook the remaining two quesadillas in the same manner.
  9. Cut each quesadilla into wedges and serve immediately.

Notes
