A straightforward recipe for flavorful chicken and vegetable skewers marinated in lemon and fresh herbs, perfect for grilling.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup fresh lemon juice
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large zucchini, cut into 1-inch thick half-moons
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow onion, cut into 1-inch wedges
  • 1 cup cherry tomatoes
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • Wooden or metal skewers

Instructions

  1. In a bowl, whisk together the lemon juice, olive oil, minced garlic, oregano, thyme, rosemary, salt, and pepper to create the marinade.
  2. Add the cubed chicken to the marinade, toss to coat completely, and cover. Refrigerate for at least 30 minutes, or up to 4 hours. Do not marinate longer than 4 hours to prevent the lemon juice from toughening the chicken.
  3. If using wooden skewers, soak them in water for at least 20 minutes before assembling the kebabs.
  4. Preheat your grill to medium-high heat (about 400°F). Lightly oil the grates.
  5. Thread the marinated chicken cubes onto the skewers, alternating with the zucchini, bell pepper, and onion pieces. Place a cherry tomato at the end of each skewer.
  6. Place the kebabs on the hot grill. Grill for 10 to 14 minutes total, turning every 3 to 4 minutes, until the chicken is cooked through (internal temperature reaches 165°F) and the vegetables have light char marks.
  7. Remove the kebabs from the grill. Sprinkle with fresh chopped parsley before serving.

Notes

  • To prevent the chicken from drying out, do not over-marinate it.
  • Cut the vegetables and chicken into uniform sizes so they cook evenly.
  • Grill vegetables separately if you notice them burning before the chicken is done.
