Ingredients

Scale
  • 1 cup brown or green lentils, cooked
  • 1 cup walnuts, toasted and finely chopped
  • 1/2 cup breadcrumbs (panko or regular)
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 large egg (or flax egg substitute)
  • 2 tablespoons tomato paste
  • 1 tablespoon soy sauce or tamari
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 large lettuce leaves (Romaine or butter lettuce suggested) for wrapping
  • Optional toppings: Sliced tomato, mustard, sprouts

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a small loaf pan.
  2. In a large bowl, combine the cooked lentils, chopped walnuts, breadcrumbs, onion, garlic, egg, tomato paste, soy sauce, thyme, salt, and pepper.
  3. Mix all ingredients well until everything is evenly incorporated. You should have a mixture that holds its shape when pressed.
  4. Press the mixture firmly into the prepared loaf pan.
  5. Bake for 30 to 35 minutes, or until the meatloaf is firm and lightly browned on top.
  6. Remove the meatloaf from the oven and let it cool in the pan for about 10 minutes before slicing.
  7. Slice the loaf into 8 even portions, creating your ‘meatloaf’ slices.
  8. To assemble the wraps, place one slice of the lentil walnut meatloaf onto the center of each lettuce leaf.
  9. Add your favorite toppings, like tomato or mustard.
  10. Fold the lettuce leaf around the filling to create a wrap. Serve immediately and enjoy your fresh creation!

Notes

  • If you soak the walnuts overnight and then drain and toast them, the flavor deepens.
  • For a flax egg, mix 1 tablespoon ground flaxseed with 3 tablespoons water and let it sit for 5 minutes until gelatinous.
  • You can roast the onion and garlic slightly before mixing for a milder flavor.
  • These wraps are great for meal prep; store the baked loaf and lettuce separately.
