Enjoy a rich, creamy Fettuccine Alfredo flavor without the heavy calories. This recipe swaps traditional pasta for zucchini noodles, giving you a comforting dish that supports your healthy eating goals. You can indulge wisely.

Ingredients

Scale
  • 3 medium zucchini
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 cup low-fat milk or unsweetened almond milk
  • 1/2 cup grated Parmesan cheese reduced fat
  • 1/4 cup cream cheese light
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Pinch of nutmeg

Instructions

  1. Use a spiralizer to turn the zucchini into noodles (zoodles). Set them aside.
  2. Heat olive oil in a skillet over medium heat. Add minced garlic and cook until fragrant, about 30 seconds. Do not brown the garlic.
  3. Pour in the low-fat milk. Bring the mixture to a gentle simmer.
  4. Reduce heat to low. Whisk in the reduced-fat Parmesan cheese and light cream cheese until the sauce is smooth and creamy.
  5. Stir in the salt, pepper, and nutmeg. Taste and adjust seasoning if needed.
  6. Add the zucchini noodles to the skillet. Toss gently for 1 to 2 minutes until the zoodles are warmed through. Do not overcook or they will become watery.
  7. Serve immediately.

Notes

  • You can add grilled chicken or shrimp for extra protein.
  • For a thicker sauce, simmer for an extra minute or two before adding the zoodles.
  • If your zoodles release too much water, drain them briefly before adding them to the sauce.
